The Copper Table Recap : A Night on the Amalfi Coast
Clinking glasses, string lights, chatter of strangers who will soon become friends, and the glow of the copper table. This was the scene that I walked into on October 25 as the team at The Refinery finished their summer of three dinner pop up experiences. Here, at The Refinery, there is a strong community of creatives that support each other in the coworking space. The Copper Table supper series helped them grow their branches to the creatives in the food industry as well.
For Dinner Three we were graced with the presence of Chef Fiore Tedesco of L’Oca d’Oro. He spoke about growing up in New York as part of a large Italian family and the incredible memories that come from the foods that he ate as a child. That is where he took his inspiration for this dinner: a night on the Amalfi Coast, including a happy hour and dinner with friends.
The first part of the dinner was a cocktail style happy hour. Austin Aperol Spritz cocktails with Tito's Vodka were served as everyone milled around the room meeting new friends. Topo Chico & Tito’s with little flowers? So delicious! The oysters towered (quite literally!) over the rest of the table! These were Duxburys and Island Creeks with Italian dressing and Mignonette & Bitter Orange Marmalade.
Upon everyone's arrival, a bottle of champagne was popped and everyone took their seats. Our mouths started watering as Chef Tedesco shared the menu for the evening, including an antipasti and sandwiches inspired by his childhood with a sophisticated flair.
First, was fresh mozzarella, hand-pulled by Chef Tedesco that morning, topped with pea shoots, roasted peppers, and marinated anchovies. Next, came a sandwich with porchetta, bitter greens and provolone piccante on a Schiacciata all’olio. Finally, a “Chicken Parm. Bianco,” was everything you dream of when you imagine mixing a sandwich with pasta. The sesame semolina hoagie was topped with chicken cutlets and spaghetti cacio e pepe; nothing short of incredible!
